Sad News

It's sad news . So ,so sad . Please join the crew of the Good Ship Sonshine in remembering a great icon of the entertainment community .
The Pillsbury Doughboy died yesterday of a yeast infection and trauma complications from repeated pokes in the belly.
He was 71.
Doughboy was buried in a lightly greased coffin.
Dozens of celebrities turned out to pay their respects including Mrs. Butterworth , Hungry Jack , the California raisins , Betty Crocker , The Hostess Twinkies and Captain Crunch.
Other notables included Snap , Crackle , and Pop, the Keebler Elves , Tony the Tiger, Fruity Pebbles , the Trix rabbit along with the street gang of Long John Silver, Ronald McDonald , Wendy, Jack and the gang leader Colonel Sanders .
The gravesite was piled high with flours .
Aunt Jemima delivered the eulogy and lovingly described DoughBoy as a man who never knew how much he was kneaded .
DoughBoy rose quickly in show business , but his later life was filled with turnovers .
He was not considered a very smart cookie , waisting much of his dough on half baked schemes .
Despite being a little flaky at times , he still was a crusty old man and was considered a positive roll model for millions .
DoughBoy is survived by his wife PlayDough , three children , JohnDough , JaneDough and DossyDough ,plus they had one in the oven .
He is also survived by his elderly father , Pop Tart .
The funeral was at 3:50 for 20 minutes . If this made you smile for even the briefest of moments , please rise to the occasion and take time to pass it on and share that smile with someone else who may be having a crumby day and kneads a little lift.

A really good read



I just got through reading this book and for any of you who want a cute and nice read this is it . It is "The Tale of Despereaux" . There is a movie about it but the book is far better . This is totally appropriate for a night time read for kids as well . I myself throughly enjoyed this book . I read it in two days but the illustrations are wonderful as well . I just adored the story and the book . Oh well readers take care and enjoy your day ..

eggplant burgers

Eggplant Burgers (Makes 8 Burgers)
1 Tbsp Olive Oil, plus more for sautéing
1 Medium Eggplant, peeled and cubed
1 Garlic Clove, minced
1/2 Tsp Salt
1/4 Cup Parsley, chopped
1 Large Egg
1/3 Cup Parmesan Cheese, grated
1 Cup Breadcrumbs (I used matso meal)
Accompaniments:
Buns (I use onion buns),Cheese, Tomato, Lettuce, Ketchup, Pickles, mayo, etc.
1. Heat the olive oil in a large sauté pan over medium heat and cook the eggplant cubes for 3 minutes.
2. Add the garlic and salt and continue to sauté for another 2 minutes.
3. Add 1 tbsp of water, cover and cook for an additional 3 minutes or until eggplant is fork tender. Allow to cool.
4. Place the eggplant and remaining ingredients in a food processor and puree until smooth.
5. Use about 2 tbsps of the eggplant mixture for mini burgers, 1/4 cup for bigger burgers and form into patties.
6. Heat about 1-2 tsps of oil in a large sauté pan and cook the eggplant patties for 2 minutes on each side or until golden brown.
7. Serve. * To freeze place the cooked patties on a baking sheet, freeze for 1 hour and place in a Ziploc bag, label and freeze up to 3-4 months. When ready to serve, place patties on a baking sheet in a 300 degree oven for 10 minutes until warm.

I thought this would be a great vegetarian burger for an alternative to ground beef or turkey .

wow has anyone else's mail been slow this week ?

I think my mail has been awfully slow this week , could it be the fires out there in arizona effecting the mail delivery ? maybe cause they were saying on the news this morning about how it could possibly affect things as far away as texas . Boy I sure hope not because I have quite a few friends in Texas and know that it has been having a drought beyond belief . I know we in Ohio almost hit 100 degrees yesterday , now I have been told that is rare . Of course the humidity here in Ohio is nothing compared to what I have lived with in Florida . 98 here I can breathe, in florida I could not . Anyways Im thinking those fires in Arizona are effecting the mail and has anyone else noticed how bad the weather has been all over the country ? I think we are starting to feel the effects of global warming and how we as man have been messing with the eco system . OOPS ! im starting on my conspiracy theory as my husband calls it . LOL !!!
Anyways I will leave my readers with a delish dinner recipe and a quote .
Skillet Beef Enchilada
Ingredients:1 lb. ground beef
1 large onion, chopped
1 can kidney beans, drained
1 (13 oz.) can chicken broth
1 pkg. taco seasoning mix
1 1/2 cup Minute Rice
1/2 cup sour cream
8 flour tortillas,

Directions:Brown beef and onion in large skillet, for about 5 minutes. Add beans, broth, and taco mix. Bring to a full boil. Reduce heat, and simmer 5 minutes. Stir in rice. Cover, and remove from heat. Let stand 5 minutes. Stir in sour cream. Serve with tortillas. 4 servings.

Another delish recipe for summer

Melon Ambrosia
Ingredients
3 cups watermelon balls or cubes
3 cups cantaloupe balls or cubes
3 cups honeydew balls or cubes
1 cup lime juice
1/4 cup and 2 tablespoons sugar or splenda
1/4 cup and 2 tablespoons honey
3/4 cup flaked coconut, toasted
fresh mint (if desired )
In a small bowl, combine the melon balls. In another bowl, combine the lime juice, sugar and honey; pour over melon and toss to coat. Cover and refrigerate for at least 1 hour. Sprinkle with coconut. Garnish with mint if desired.
Enjoy and if you need adjustments please do so can also be converted to 1/2 recipes .

Since the hot weather is here

Cucumber Salad
Since the hot weather is here, this is a cool delicious cucumber salad.
Ingredients:
4 cucumbers, thinly sliced
1 small white onion, thinly sliced
1 cup white vinegar
1/2 cup water
3/4 cup white sugar
1 Tbsp. dried dill, or to taste
Directions:
Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat, and bring to a boil. Pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.
